Nowadays people have learned that most vegetables are gross if they're boiled, but awesome if they're roasted. There's something magical about that heat that caramelizes the vegetable and brings out such a good flavor, which boiling can never do. I'm glad we're still advancing gastronomically ;)
1 pound Brussels sprouts, ends cut off and halved
4 slices bacon, cooked and crumbled
1 green onion, sliced, white part separated from green tops
Preheat the oven to 400*F
Cook the bacon until crisp, then set aside. Drain bacon grease, reserve 3 Tbsp and add back into pan.
Add halved Brussels sprouts and bottoms (white part) of onion to pan with bacon grease and cook for 3 mins, stirring occasionally. Meanwhile, crumble bacon.
After 3 mins, remove from heat, mix in bacon crumbles, then pour onto a baking sheet and place in preheated oven. Roast for 15-20 mins.
Top with green parts of onion and serve.
