Strawberry Chocolate Chip Cookies

I don't know who came up with the cake mix cookie but I would like to thank them, wherever they are!

I don't usually like using prepackaged things if I know I can make it better myself, but as of right now I don't know any better way to make the perfect strawberry cookie than to mix up a cake mix in cookie form.  

It's super easy, super fast, and super good! The mix I used didn't seem to have much color after I mixed it all up, so I added some red food coloring to 1/2 tsp of vanilla and added that in to make it a nicer shade of pink. It helped the flavor and consistency as well, win win. 

Cake Mix Strawberry Chocolate Chip Cookies

1 box strawberry cake mix, any brand

1/3 c oil

2 eggs

1/2 tsp vanilla

1-2 "drops" (I have the gel) food coloring, if desired

3/4 c chocolate chips

Preheat oven to 350*

Mix together cake mix, eggs, vanilla, and oil, and food coloring if desired. It'll take a little work to knead it all together. Stir in chocolate chips.  

Scoop and make into balls, then place on cookie sheet. Bake for 10 mins.

Makes about 20 cookies if you scoop them using 1.5 Tbsp
